Welcome to the Smiling Sauce Company!

April 1, 2012

The Smiling Sauce Company is your solution to delicious, healthy, quick and easy meals!

You can find many recipes on this site but here are two of our favorites for SPRING!

Diane’s crazy good ZING! marinade (soon to be bottled on store shelves- but until then- you can make it yourself!)

ZING! Marinade

~ 1/2 cup ZING!

~ 1/4 cup low sodium Tamari or Soy Sauce

~ 1/4 cup Brown Sugar

steak, pork & chicken: 3-4 hours

salmon & swordfish: 2 hours

shrimp & scallops: ½ hour

Following is our latest and greatest ZING! recipe: Braised Boneless Leg of Lamb with Olives and Feta

  • 5-8 lb boneless leg of lamb, trimmed
  • salt and pepper
  • 2 cups dry white wine
  • 3/4 cup ZING!
  • 1 cup mint jelly
  • 14.5 oz can diced tomatoes
  • 1 cup large green olives
  • 6 oz sliced feta

Pre-heat oven to 450

Rub lamb with salt and pepper and place in lightly-oiled heavy, oven-proof covered pan just a little wider than the lamb.

Bake the lamb, uncovered, for 20 minutes

While that’s baking, place ZING!, wine, jelly, and tomatoes in a pot and heat until jelly is melted

After lamb bakes for 20 minutes, pour the sauce over the lamb, sprinkle the olives around it and cover the pot. Reduce oven to 350 and bake the lamb for 2 hours for 5 lbs or 3 hours for 8 lbs.

Towards the end of the cooking time, check the meat. It is done when the meat easily falls apart with a fork. Put the lamb on a cutting board and let it sit for 10 minutes.

Skim the fat off the sauce in the pan.

Roughly cut the lamb and arrange it on a platter tucking the slices of feta between the slices of lamb. Pour the sauce with olives over the lamb and feta on the platter and enjoy!
